Iftar Recipes for Ramadan

Ramadan is a holy month where people engage in worshipping Allah and fasting for the whole day. It is also the time to savor the most delicious delicacies.

The essence of fasting during Ramadan is spiritual but it also helps to tune the mind. This is the time where we all are involved more into charity work, helping poor and under privileged people and strengthening our family bonds.

Preparation starts weeks before the arrival of Ramadan. After breaking the fast in the evening, we all look forward to a feast with our friends and families.

People love hosting iftar parties where they greet and share food together with a community. Variety of foods are prepared for the iftar meal.

Below are some tempting dishes that you can prepare for your iftar party.

Starting with the beverage. As everyone will be thirsty and tired after a whole day fast, thus it will be better to make something refreshing which is healthy as well as tasty.

Fruity coconut water

A simple coconut water can be twisted and turned into great drinks.

You can make 2-4 types of fruit infused coconut water with fruits like strawberry, orange, pineapple, cucumber, grapefruit, kiwis or any of your favorite fruit.

Plus, the preparation of this drink is super easy and convenient.

How to prepare?

You need coconut water and fruits such as strawberry. Orange, lime, cucumber.

Here are the steps to prepare fruit infused coconut water. Use the same procedure to prepare different flavored coconut water.

  •         First of take a jar or a pitcher.
  •         Pour coconut water into the jar.
  •         If you are making with strawberry then cut the fruit into 2 halves or 4 or as per your need.  But make sure that the pieces are not too small.
  •         Repeat the above process for other fruits as well such as lemon, cucumber, etc.
  •         Put the diced fruit into the jar, you can also add mint leaves for a refreshing taste.
  •         Place it in the refrigerator (fridge) for an hour.
  •         Serve chilled with ice cubes and nuts (as per your taste).

The above process can be repeated to prepare double fruit infused coconut water as listed below.

  • Lime and Mint Leaves
  • Cucumber and Raspberries or Kiwis
  • Orange and Ginger
  • Lemon and Blueberries

By this time, the hunger meter must have reached to its top level. So let’s treat our guests with delightful meals. Here is the recipe for Lamb Biryani and Arabian Chicken stew.

Lamb Biryani

This mouth-watering dish is prepared with rice and lamb meat cooked in layers with saffron, butter and spices. Being a foodie and a cook, I know that the key to a delicious biryani is the balance of flavours and slow cooking. But most importantly it is the method, which brings the flavours to every bite of the dish.

Ingredients required

For Marinating

  • Lamb pieces
  • Salt
  • Cumin powder
  • Cinnamon powder
  • Cardamom powder
  • Clove powder
  • Red chili powder
  • Anise seeds
  • Black pepper powder
  • Black cardamom
  • Turmeric powder
  • Yogurt
  • Lime Juice
  • Star Anise
  • Minced Garlic
  • Minced Ginger
  • Olive oil, butter

Other Ingredients

  • Rice
  • Onions
  • Cloves

How to prepare?

  •         Marinate the lamb using the ingredients under ‘for marinating’. Mix all the ingredients according to your measurement with each other. Cover, and keep aside for an hour or 30 minutes.
  •         Soak rice in a container while marinating the lamb. Afterwards cook the soaked rice.
  •         Place the marinated lamb into the pressure cooker.
  •         Add water in the pressure cooker for some time, until you hear the first whistle.
  •         After the first whistle, open the lid and start preparing for the layering of rice and lamb.
  •         Take a heavy-bottomed pan and heat the oil and ginger-garlic paste and add the mutton.
  •         Layer the mutton with rice and saffron.
  •         Then add lamb and another layer of rice again.
  •         Close the lid of a pan and cook the dish in low heat for 20 min.
  •         After 20 minutes your dish is ready to serve with yogurt or any other dip.

Tip:

If you don’t have a pressure cooker then you can cook the lamb in a pan.

After marinating the lamb, take a pan and cook the meat on medium heat for one and half hours.

Stir occasionally and add water as needed.

Add soaked rice when the meat is more than half cooked.

After half an hour the meal is ready.

You are ready to serve your hearty dish with the guests.

Arabian Chicken Stew

Chicken stew is a normal dish which is cooked on a regular basis. Feed your palates with this authentic and flavorsome dish.

This chicken stew is a hearty and healthy recipe, where you can add as many vegetables as you want.

Let’s begin the cooking procedure!

Ingredients required

  • Chicken pieces
  • Fine chopped tomatoes
  • Diced zucchini
  • Finely chopped onion
  • Diced potato
  • Diced carrot
  • Minced garlic cloves
  • Chopped coriander leaves
  • Oil
  • Tomato paste
  • Coriander powder
  • Cumin powder
  • Black pepper powder
  • Turmeric powder
  • Cardamom powder
  • Cinnamon powder
  • Salt to taste

How to prepare?

  •         Take a pan, add oil and onion, cook until onion turns light brown.
  •         Add chicken and cook on medium heat until light brown patches are seen on both sides of chicken.
  •         Now add potatoes and carrots and stir for 3-4 minutes.
  •         Add the tomatoes, and again stir for three minutes.
  •         Cover the pan with a lid and let it cook on medium heat for 5 to 7 minutes.
  •         Check and stir occasionally so that it does not burn.
  •         Add garlic and spices and stir to combine.
  •         Then add the zucchini and tomato paste and mix them.
  •         Add salt and boiling water and let the stew cook for some time, until the chicken is cooked.
  •         Serve hot and garnish with coriander leaves.

Tip: Make sure that you add the vegetables when the chicken is almost cooked, so as to keep the nutrients of the vegetables.

The day should be concluded with desserts such as halawat el-riz or chocolate cake or mafruka or any other sweet delicacy. Make sure that over indulgence is avoided.
